Tarragon is a much-used herb in the French and Italian kitchen. It has an intense flavour and should be dosed carefully. In France, tarragon is also used as a medical plant. Supposedly it has a metabolism stimulating effect, lowers fever, helps with cough and supports the digestive organs.
Beside using tarragon in the kitchen and as medicine, you can also prepare cocktails, lemonades or iced teas with this intense herb. It goes perfectly with bitter and slightly sour ingredients such as cucumbers, basil or lemons. Combined with sweet notes the prepared drink will develop special and complementary flavours. This Tarragon syrup made by Giffard has a bluish-green colour and is slightly cloudy. It has an refreshing and slightly bitter scent and taste of tarragon supported by aniseed and eucalyptus notes.
