Matcha is powdered Japanese green tea that can be consumed as part of the Japanese tea ceremony, as well as in everyday life. In recent years, Matcha has gained popularity around the world due to its health properties. Because you consume the whole leaf, you don't lose antioxidants, vitamins and minerals - you take a lot more than you can by brewing green tea leaves in hot water, as usual.

Most Japanese Matcha is grown in the Uji region of Japan, near the ancient capital of Kyoto. Tea leaves used for Matcha are shaded 2 to 6 weeks before harvest, traditionally by covering them with straw or building a bamboo shelter around them; today black sheets are used. This technique stops sunlight from entering the leaves and slows down the last period of growth. Thanks to this, two important processes take place - an increase in the level of chlorophyll and amino acids in the leaves and the appearance of very delicate, fresh shoots. This will ensure that the leaves after picking and processing will be light green, full of flavor, juicy and without a trace of bitterness.

After harvesting - the highest-quality Matcha is hand-picked - the leaves are selected, cleaned and partly dried before cooling. The leaves in this phase are called tencha. Those that are ideal for producing Matcha can only be harvested once or twice a year, so it is important to store them in the cold room for the next 48 hours, which allows you to use tencha to make matcha throughout the year.

To produce Matcha, tencha leaves are dried again. Then, traditionally, they are ground on hand-carved millstone. The traditional method requires about 20 minutes to grind 10 g of Matcha powder. The grinding process cannot be completed faster because acceleration would cause too much friction and heated the powder, and would also prevent the production of the best quality Matcha.

Modern factories have grinders that can grind much more tencha. Grinding sites at Matchy factories are always dark and temperature-controlled to ensure that light green color and flavor are not lost during processing.

Matcha is prepared by mixing it with hot water to get a medium thick drink that is traditionally drunk at one time. Matcha has been popular for hundreds of years as part of the Japanese tea ceremony, initially due to its ability to assist monks in being alert during meditation and fasting. When consuming all the tea leaves, you consume all the caffeine, minerals and antioxidants, making Matcha a powerful antioxidant.

How to prepare Matcha?

Put half a tablespoon of Matcha into a small bowl. Pour in 25 ml of cold water, then gently insert the whisk, sweeping around the edges and bottom of the bowl to remove lumps sticking to the sides of the bowl. Then beat with "W" until foam appears on the surface. (If you don't have a bamboo whisk, you can use a fork or a battery whisk (this way you won't be able to produce the highest quality matcha.) Rinse the whisk well and then enjoy the matcha straight from the bowl.

If you want to enjoy a rare matcha, you can top up the bowl with 200ml water after mixing.
