Pu Erh is the whiskey of the tea world - the older the better and the more complex the taste. Traditionally produced in the Chinese province of Yunnan. Pu Erh tea leaves are packed in "cookies" or "bricks" to mature over time. When the tea is ready to drink, small amounts can be crumbled into each cup. Pu Erh teas are a wonderful combination of taste and aroma, often similar to malt, chocolate or coffee, but with a light freshness associated with green teas.
Pu Erh teas undergo all processing steps, including oxidation, but at a later stage are packaged and stored for a long time in a dark, moist place before they are sold. Sometimes this is called fermentation, but it is more like an aging process that creates a complex, earthy, malty taste. Some pu erh teas ripen for many years, as do whiskey or wine.
