Pai Mu Tan literally means white peony.
Other names are: Mudan White tea, Mutan White tea, White Peony tea, Bai Mudan.
It is traditionally grown in Fujian Province in China.
White tea is the least processed variety of tea: tea leaves are often simply harvested and then gently dried. The ideal leaves to use are the youngest, and even just the buds usually picked by hand in the first harvest of the year. Pai Mu Tan has a light color, floral and often still grassy aftertaste. It is the most delicate in taste and aroma and goes well with high scent notes such as rose or jasmine. Basically, white tea is high in nutrients and low in caffeine.
